So Sweet Sunday #5

Is it already time for our next link party? This week has simply flown by! It hasn't been a great week for baking or crafting around here. It feels like everything I touch lately turns into a disaster. I suppose we all have those days, but they're certainly frustrating, nonetheless. There is one little treat I made the other night that did come out quite good. Sadly, I didn't take any pictures, but I do have the recipe to pass along!

Cake Mix Biscotti

1 box white cake mix
2 eggs
1 Tbsp vegetable oil
1 tsp almond extract
1/2 tsp vanilla extract
pinch of cinnamon
1/2 to 1 cup Nutella


  1. 1. Heat oven to 350°F (or 325°F for dark or nonstick cookie sheet). In large bowl, mix cake mix, oil and eggs with spoon until dough forms (some dry mix will remain). Stir in the add-ins of your choosing (I didn't add mix-ins this time around).
  2. 2. On a lightly greased cookie sheet, shape dough into 15x4-inch rectangle, using greased hands. Bake 20 to 25 minutes or until golden brown. Cool on cookie sheet on cooling rack for 15 minutes.3
  3. 3. Cut rectangle crosswise into 1/2-inch slices. Place slices, cut sides down, on cookie sheet. Bake 10 to 12 minutes longer or until edges are deep golden brown. Cool 5 minutes; remove from cookie sheet to cooling rack. Cool completely, about 30 minutes.4
  4. 4. In a small heat-proof bowl, microwave Nutella 30 seconds; stir. Dip one end of each biscotti into the chocolate, place on a lined cookie sheet or place, and chill until chocolate hardens. Store in an airtight container and enjoy!
Tip: We keep our container of cookies in the fridge so that the Nutella remains firm.

  4. I love recipes that use cake mixes in new ways. Biscotti is always fun to make. I didn't realize the Nutella would harden up when melted like that. Will have to give it a try.

    Suzy--The Nutella didn't really ever harden up. Putting it in the fridge did help, which is why I ended up keeping the cookies in there. I didn't think about the whole aspect of Nutella staying soft until after I had already dipped everything... hehe. They are still yummy, but next time I would probably just use melted chocolate chips. :)
