Melt-In-Your-Mouth Almond Cookies
1 c unsalted butter, softened
3/4 c packed light brown sugar
1/2 c white granulated sugar
2 large eggs
1/2 tsp pure vanilla extract
1/2 tsp almond extract
2 1/2 c all-purpose flour
1 tsp baking soda
1/2 tsp salt
Optional: confectioners sugar or M&M candies
Directions:
- Preheat oven to 350 degrees Fahrenheit. Line a cookie sheet with parchment paper and set aside.
- Cream together butter and sugars until smooth. Beat in eggs, one at a time. Stir in extracts.
- Sift together flour, baking soda, and salt. Gradually stir into wet ingredients and mix until just combined.
- Optional: Stir in M&M candies (as many as your heart desires)!
- Bake 10-12 minutes, until golden brown. Let cool 2 minutes on cookie sheet before moving to cooling rack.
- Optional: After moving to cooling rack, lightly dust cookies with confectioners sugar.
Enjoy these tasty cookies with a warm cup of coffee! I promise you won't be able to eat just one. ;)
