Linky Party: So Sweet Sunday #2

Before jumping into So Sweet Sunday #2, I have my own sweet treat to share with you all tonight! The base of this cookie comes from everyone's favorite recipe around my house, White Chocolate Macadamia Nut Cookies. The dough itself is so good that I thought it would be fun to try making it in some new ways. In the spirit of Easter and all things Spring, I baked up two varieties. The first has a healthy portion of dark chocolate and coconut M&M's mixed into the batter (pastel colors, of course). The second cookie is kept free of any add-ins and is instead sprinkled with confectioners sugar while still warm. Scott's favorite is the M&M's, but I am partial to the powdered sugar. Either way, both varieties of this buttery, almond-flavored cookie simply melt in your mouth. This is a "must try" for everyone who loves a great cookie!

Melt-In-Your-Mouth Almond Cookies

1 c unsalted butter, softened
3/4 c packed light brown sugar
1/2 c white granulated sugar
2 large eggs
1/2 tsp pure vanilla extract
1/2 tsp almond extract
2 1/2 c all-purpose flour
1 tsp baking soda
1/2 tsp salt
Optional: confectioners sugar or M&M candies

Directions:
  1. Preheat oven to 350 degrees Fahrenheit. Line a cookie sheet with parchment paper and set aside.
  2. Cream together butter and sugars until smooth. Beat in eggs, one at a time. Stir in extracts.
  3. Sift together flour, baking soda, and salt. Gradually stir into wet ingredients and mix until just combined.
  4. Optional: Stir in M&M candies (as many as your heart desires)!
  5. Bake 10-12 minutes, until golden brown. Let cool 2 minutes on cookie sheet before moving to cooling rack.
  6. Optional: After moving to cooling rack, lightly dust cookies with confectioners sugar.










Enjoy these tasty cookies with a warm cup of coffee! I promise you won't be able to eat just one. ;)
